A graduate of the Institute of Culinary Education’s “Culinary Management Diploma” program, Colin Camac heads up all things front-of-house as our Service Director and resident wine connoisseur.  Having worked as a waiter, manager and general manager, Colin has first-hand working knowledge of how to run a tight ship, and puts that knowledge and experience to good use in keeping all of our restaurant staff well-informed and educated on the finer points of service.  His passion for wine and impeccable taste keeps the wine programs at both Fatty Crabs at the top of their game, garnering respect and accolades from top wine writers in the country.  Colin’s passion for the industry is a valuable asset to the Crew, with his free time almost entirely dedicated to eating and drinking his way through many of New York’s tastiest eateries (when he’s not eating at our own, of course).
